* Cormac McCarthy's The Crossing. The only example I know of where the victim's eyes are *sucked* out, rather than gouged or ripped out by hand, and where they retain their vision until they dry out, so he actually sees his friends trying to jam them back into place. --Wrybread
* In Homestuck, Vriska loses an eye and an arm when Terezi exacts revenge on her for the various nasty deeds she'd done. In return, Vriska uses her mind control to force her to stare into the sun until she goes blind.
* Uryuu Minene. First, Yukiteru took her eye out with a dart. Then, Twelfth gouged out her eye with his hand and put it in a glass jar. The resulting wound was so horrible it needed to be pixellated.
