A vinaigrette has a 3 to 1 oil to vinegar ratio with mustard. When shaken, vinegar breaks up into droplets and suspends into oil, thickening up. Mustard helps to emulsify the vinaigrette. It can also be emulsified with pureed vegetables. Typically served on top of a salad.
