糟蛋是將鴨蛋置於米糟酒浸泡至蛋殼溶盡,蛋膜完好而成,據說三年以上的陳蛋風味尤佳。吃法是先把糟蛋置於碟中,加適量白糖,再滴白酒少許, 用筷略微攪動,待蛋、糖、酒融為一體後,即可徐徐拈食下酒,別有風味。因製法源於敘州府(即今之宜賓),故又稱敘府糟蛋,一直為中國四川名產。
