After all, he had the same last name and was hidden on Anakin's own home planet, in the very house his mother lived in during her final years. For #1, perhaps she was remembering her adopted mother, mistaking her for her real mother.

The answer to both of these probably lies in the fact that George Lucas _didn't_ have the whole story in his head while he was writing/filming the earliest parts. That explains a lot of the inconsistencies in the story, as well as in the books (for instance, in the original Star Wars novel, Leia is older than Luke by a few years). It's also a great credit to his imagination, since he had to make the prequel explain a large number of difficult-to-reconcile facts. For #2, sometimes force sensatives are able to mask there force abilities without knowing they are doing so. I'm sure there a perfectly good explanation, it's just that George hasn't thought of it yet.
