Butterscotch Cake 2 cups cake flour -- sifted 3 teaspoons baking powder 1/2 teaspoon salt 2 medium eggs 1 1/2 cups brown sugar, packed 1/2 cup butter or margarine -- softened 1 teaspoon vanilla extract 1 cup milk butter frosting: 1/4 cup butter or margarine 2 cups powdered sugar 1/2 teaspoon vanilla extract 2 tablespoons cream 1 tablespoon hot water Frosting: Brown butter over low heat, watching carefully. Add rest of ingredients and stir until cool and of consistency to spread. This was a second place winner in the professional category of cake layers at the Del Mar fair, 1993.
