To answer the only question I can see in this... blurb, no Kubo has not lost his mind. It is true that Aizen keeps getting stronger but so is Ichigo. Therefore, when both the main protagonist and the main antagonist are mutually capable of gaining infinite power, it stands to reason that the author does have some plan by which to dispose of the antagonist. I'm sure there will be, but for now, please let Kubo-san do his job. I'm sure answers will be brought throughout the series.

If Aizen had died to Gin, then we would have had people screaming about how Ichigo is training for nothing. So in a sense Kubo can't really win in the short term. Only in the long run can you decide if Kubo has done a good job or not. Remember, a single chapter is rather insignificant. It's only 1/9 of a volume and 1/415(and counting) of the whole Bleach story. So its not really fair to judge Kubo's mental state based on one chapter. I'm sure there will be, but for now, please let Kubo-san do his job. I'm sure answers will be brought throughout the series.
