A polysaccharide is any molecule made up of linked molecules of simple sugars. A typical example is starch, which is produced by plants, and glycogen, which is made by animals and is stored in the liver and muscles. These large molecules often have quite different physical properties than their constituent sugar molecules, such as the fact that although flour is made up of linked sugar molecules, it is not soluable in water.
