| - Chicken with Walnuts 1 t. salt 1 t. sugar 1/2 t. ground ginger 3 T. soy sauce (may use light soy sauce) 2 garlic cloves, minced 2 large chicken breasts, boned, skinned and cut into bite size pieces 3 T. oil 1 cup walnuts 1 can bamboo shoots, drained (8 oz) 1 T. cornstarch 1 cup hot water Hot fluffy rice Mix salt, sugar, ginger, soy sauce, and garlic in bowl. Stir in chicken. Let stand 20 minutes stirring occasionally. In large skillet, over high heat, heat oil. Add walnuts and stir fry 1 minutes. Remove walnuts with slotted spoon. Set aside. Add chicken to skillet. Cook 2 minutes stirring constantly. Mix in bamboo shoots; blend cornstarch and water. Add to skillet. Cook, stirring until sauce is thickened and clear. Stir in walnuts.
