Rotisserie is a style of roasting where meat is skewered and revolves over a flame or spit. The rotation slowly cooks the meat in its own juices and allows easy access for continuous basting. Rotisserie can be horizontal or vertical. Horizontal rotisserie is often used to cook chicken or pork. Some dishes that are cooked on a vertical rotisserie: * Döner kebab from Turkey * Gyros, from Greece * Shawarma, from the Near East * Taco al pastor, from Mexico
