Orange in color, their skin darkens dramatically when aged. Reebers can be eaten raw or prepared in various ways, such as sun drying or aging in water to concentrate flavor. Reeber fish are mostly bladder with a tough skeletal structure and three hard fins which are removed prior to consumption or drying. When served fresh, they can be sliced as a decorative meal by artistic chefs into various forms such as flowers, lace designs, or even the face of the chef itself. The flavor and appearance of dried Reeber is not unlike a fishy raisin.
