Accasciato is an Italian cheese sold both as a young, semi-soft and mild cheese and as a firm aged cheese with fissures and streaks of good mold. It is made from a mix of buffalo and cow's milk (or sheep and cow's milk), produced in the area of Garfagnana and the Apuan Alps and aged in a natural limestone cave in the Italian region of Tuscany. The name Accasciato means collapsed. When removed from its mold it collapses.
