Golden Delicious apples have a long season, usually from September to early June. They are a fairly good all-purpose apple though they do tend to lose some flavor when cooked. Good-quality Golden Delicious apples will be firm with smooth, clean skin and range in color from light green to pale or creamy yellow. Less mature product will be light green and have a somewhat tart flavor. More mature goldens will have a clear yellow color and will be sweeter. Some goldens may have a wash of pink color or blush across the "shoulders," the result of warm sunny days and cool nights. Test the firmness of the apple by holding it in the palm of your hand. (Do not push with your thumb). It should feel solid and heavy, not soft and light. The Golden Delicious is a cultivar of apple with a yellow color. It is not related to the Red Delicious apple. The variety was first called Mullin's Yellow Seedling when it was first marketed in 1914 in Clay County, West Virginia. It is a very popular cultivar, being very sweet to the taste although it is prone to bruising and shrivelling and so needs careful handling and storage. It is sweeter than the Green Apple and is not good for cooking.
