Gypsum powder is used as a tofu coagulant, making it ultimately a major source of dietary calcium, especially in Asian cultures which traditionally use few dairy products. It is also used to add hardness to water used for homebrewing and is a common ingredient in making mead. It is also used as a coagulating agent when making beancurd (a tablespoon to a litre soybean milk).
