1. In a medium-size bowl, blend the pancake mix, water, and banana with an electric hand mixer. 2. Meanwhile, preheat a nonstick griddle or skillet to 450 °F. Pour the pancake mixture onto the griddle and cook for 1 -1/2 to 2 -1/2 minutes. Then turn the pancakes over and cook for another minute. Transfer the pancakes to a plate and serve with blueberry sauce (below). In a microwave-safe bowl, combine the blueberries, orange juice, and maple syrup. Microwave on medium setting for 5 minutes. Drizzle over the pancakes. Serves 2.
