Joe ran a general store in Lusk, Wyoming with his brother, Pete. In August 1890, he joined a hunting party in the employ of paleontologist John Hatcher. While Joe and his band were hunting, they encountered a ripple in time (something they didn't realize), briefly being transported to prehistoric Wyoming. Realizing that the terrain had changed (but not why), they quickly retraced their steps, and returned to the present day. While tracking a herd of buffalo, Joe and his men discovered a Torosaurus had wandered in with the herd. Assuming that it was some sort of diseased buffalo, Joe and his men killed and butchered it, and brought the meat back to the camp.

Joe and his fellow hunters never realized what they'd killed, and Hatcher never learned that he'd eaten a living specimen of the creatures he studied.
