It depends, group birds like finches fight as a group to protect their colony and as you would expect they peck and flap, but also fly around and try to distract and crowd the other bird or animal, but I'm not sure with birds that do not live in groups also chickens are another example they don't really have a good defense especially in the dark, although sometimes they will peck and scratch to try to drive the predator away
