A short plate primal cut is derived from a forequarter and is more or less the area below a rib primal cut, that between a flank primal cut and a brisket primal cut. The only bone segments in a plate primal cut are from bottom portions of seven ribs, ribs 6-12. (A rib primal cut includes the top portions of those ribs.)
