In 1979 Simon started to work as an assistant director on the television series Vega$ and was the second assistant director on the series' second season. Further credits as assistant director include the thriller Just Before Dawn (1981), the science fiction thriller Night Shadows (1984), the television series T.J. Hooker (1983, starring William Shatner and Richard Herd), Mike Hammer (1986), The Highwayman (1987), Raven (1992), and Walker, Texas Ranger, the television drama Dark Avenger (1990), the television drama Switched at Birth (1991), the war drama The Tuskegee Airmen (1995), the television drama Nothing Lasts Forever (1995), the television series Silk Stalkings (1996), L.A. Firefighters (1996), Columbo (1999 and 2004), CSI: Crime Scene Investigation (2000), Medical Investigation (2004-2005, starring Neal McDonough), Zoey 101 (2006), and The Kill Point (2007), the comedy Major Movie Star (2008), and the comedy Yes Man (2008). Beside his work as assistant director, Simon worked as production manager on the television movie Greyhounds (1994, directed by Kim Manners and with Roxann Dawson) and on the remake of the television series Hunter (2003). He was associate producer on the comedy A Day Without a Mexican (2004) and a production consultant on the short horror film Gotham Cafe (2005, with Julie Sands, Cullen Douglas, and Kevin Brief). More recently he worked as second unit second assistant director on the crime drama The Losers (2010, with Jeffrey Dean Morgan and Zoe Saldana), as additional second assistant director on the comedy Easy A (2010), and as first assistant director on the drama Least Among Saints (2012).
