well at the end of the first all the other families have been wiped out and taken over by the corleones. so they don't really exist by the time of the events of the second. and they aren't mentioned at all most likely because the game makers wanted to focus more on the new families they added for the second. or they couldn't think of a way where them mentioning the old families would fit into the game because of the storyline
