I tried it by going into the extras into the starting menu and pressing options then difficulty but that didn't work, so I resumed my game when I was fighting Saren, switched the difficulty to my desired level, and started a new game with that difficulty. (note: there will be two save games pretty much exactly the same, usually the one on the bottom is the new difficulty, if not, restart with the one on the top.)
