We can't adapt to not breathing oxygen - we'd have to use spacesuits, or stay in pressurised buildings. Low temperatures could in theory be biologically adapted to, but it's quicker and easier to just wear warm clothing. The main issue is the low gravity. This would probably lead to weakening of muscles and bone strength - not a problem for those staying on Mars, but problematic if they wished to visit Earth.
