A flow-through pasteurization device, however, can pasteurize more water in a given time period for the following reasons: 1. * The hot pasteurized water exits the cooker into a simple heat exchanger where much of its heat is transfered to the cold water that is entering the cooker. 2. * The thermostatic valve opens precisely when pasteurization temperature has been reached (with some safety margin). This means that the water is never heated to a higher temperature than is necessary to make it safe to drink.
