1 Dissolve gelatin in boiling water. 2 Add pineapple juice/water mixture and orange rind. 3 Chill until slightly thickened. 4 Then fold in pineapple and carrots. 5 Pour into 6-8 individual round molds. 6 Chill until firm. 7 Unmold on crisp lettuce. 8 Add carrot strips to form ears, a large marshmallow for the head, and a half a marshmallow for the tail. 9 Serve plain or with Mayonnaise, if desired
