This is an extract that's distilled from the pandanus flowers and is used to provide flavors for meat, drinks, and desserts in India and Southeast Asia. A milder form of this flavour is Kewra water. Kewra essence is yellow or transparent. It adds a hint of colour and fragrance to some pulaos and sweets. It can be used in Biryani, Sweet rice (zerda) or mutangun (colour full rice).
