The Esquilax is claimed to be a horse with a head of a rabbit and the body of a rabbit by Chief Wiggum, in his "Friar Wiggum's Fantastical Beastarium", but is most likely just a rabbit. It appears in the episode "Lisa's Wedding", at the renaissance fair, among other animals.
