If you just finished smoking your ham after pickling you should let it cool down before boiling. Hopefully you've controlled the temperature of the smokehouse and it has not yet started cooking inside. A 5kg ham would need to be boiled about 4-5 hours. The water should just simmer lightly. Also, let the ham cool down completely in the water after you turn off the heat. It's best stored in a pillow case for a couple of weeks or vacuum sealed for longer. Chuck.
