A method of cooking in which food is placed on a grill directly over a fuel source such as charcoal or wood so that the surface burns or chars slightly. This creates a flavorful crust on the surface of the food while sealing in the natural juices. The smoke from the fuel source permeates the food, adding flavor to it.
