The ettasanav is a Zharan root vegetable, usually yellow in colour, though purple, red, white, and blue varieties exist. It has a smooth texture when fresh. The most commonly eaten part of an ettasanav is the sweet, bulbous taproot, although the tart greens are commonly eaten as well. Both parts can be used as ingredients for a variety of dishes.
