Cannon Galleon is a technology in Age of Empires II that can be researched at the Dock once the Imperial Age is reached and Chemistry is researched. Once researched, Cannon Galleons can be built. Cannon Galleon is available to all civilizations except for the Aztecs, Huns, Incas, and Mayans.
