Heutaler Bergkäse is a cheese made in Switzerland. It is made from milk from the Bernina mountain area, specifically the Val dal Fain (Heutal) from which its name comes. It is a full-fat semi-hard cheese made from raw milk, which is rather mild when young, but ages to a spicy flavor. It is normally allowed to ripen for from 4 to 12 months at about 13° C (55° F) during which it is washed with brine twice a week.
