1 In covered blender container at low speed, blend 1 cup watermelon chunks with confectioners" Sugar, lemon juice and salt until mixture is smooth; add remaining watermelon chunks and blend a few seconds longer until smooth. 2 Pour into 9" by 9" baking pan; cover with foil or plastic wrap and freeze until partially frozen, about 2 hours.into chilled large bowl, spoon watermelon mixture. 3 With mixer at high speed, beat until fluffy. 4 Return mixture to baking pan and freeze until firm, about 1 ½ hours. 5 To serve: remove watermelon ice from freezer and let it stand at room temperature 10 minutes for easier scooping. 6 You will enjoy this recipe. 7 Later. 8 Susy
