Mashing is the process of converting starches in ingredients such as malted barley into fermentable sugars and dextrins, which add residual sweetness and body. Mashing also converts complex protein molecules into more favorable ones. Mashing involves heating the wort to certain temperatures, and holding it there for certain amounts of time, which allows enzymes to develop and to most efficiently complete starch and protein conversion.
