Chocolate Liquor (cocoa liquor) is pure chocolate in liquid form. Like the Cocoa Beans from which it comes, it contains equal measures of cocoa solids and Cocoa Butter. It is produced from cocoa beans that have been fermented, dried, roasted, and separated from their shells. The beans are ground into cocoa paste (not to be confused with Cocoa Powder). The mass is melted to become the liquor, and the liquor is cooled and molded into blocks known as "unsweetened baking chocolate" (also known as bitter chocolate).
