1) In a large bowl mix potatoes with the spices, cilantro, eggs and seasonings. 2) Form mixture into patties. Cover and chill for 30 minutes. 3) Heat a shallow layer of oil in a frying pan, add the cakes in batches and fry until crisp and brown on both sides. 4) Drain on paper towels and serve.
