Boursault is a soft-ripened triple-crème cheese which contains more than 75% butterfat in its dry matter, that is, roughly 40% fat overall, similar to the fat content of extra-heavy liquid cream. It tastes rich and creamy. A soft, snowy rind surrounds this rich triple-cream cheese that has the consistency of thick sour cream. It comes in small paper-wrapped cylinders.
