Spring Gap Mountain Creamery is a company, located in Paw Paw, West Virginia, (close to the Shenandoah River, which is the Maryland/West Virginia boundary line) which was founded in early of 2009 and has been making cheese since April of 2010. The company exclusively produces raw (unpasteurized) cow's milk cheeses. They produce four cheeses: * Jersey Gold, resembling a Gouda * Shenandoah Sunrise, described by them as a tomme, but tasting much like a cheddar * Sophie's Select, a type of cheddar * West Virginia Blue
