Gourmet is a rather selective term really pushed when coffee shops starting popping up selling higher quality coffees and coffee drinks. Gourmet Coffee is usually better than canned coffees found on grocery shelves but there are things to look for. How long from the time of roasting to the time you get it. The faster the better. The packaging, vacuum packed coffee is better. Whole bean vs ground. Whole bean coffee retains more of the flavor elements better than ground coffee. Grinding the coffee right before its use is the best way to get the most flavor from your gourmet coffee.
