Country Charm Eggs is an egg processing plant where eggs are sanitized and weighed. USDA egg grader Harold Sullens inspects an egg by spinning the interior against a light to detect any defects. He states Double-A eggs are the freshest, the white is more firm and stands up when broken out. The yolk is rounder. A Double-A egg will age into an A. A Grade-B egg is good and clean on the outside. The yolk is plain because the white has broken down and will run out all over.
