Cabra La Mancha is a washed rind goat's-milk cheese, a proprietary name of FireFly Farms, Inc., which is a cheesemaking company located in Accident, Maryland. The cheese is patterned after a Spanish model, hence the name, which means "La Mancha Goat." It is a semi-soft cheese, and the maker advises that the rind is edible, and in fact contains much of the flavor of the cheese.
