Guerbigny or Cœur de Marie is a raw cow’s milk cheese, with a soft pate and a washed rind. The cheese is produced in heart-shaped forms, 11 cm (4.3 in) across, weighing about 250 g (9 oz), with a weight content of 23% of fat. Guerbigny is similar to a French Munster, though resembling a Rollot in appearance.
