A sour ale, also known as a wild ale, is a beer that is typically brewed with an ale yeast and then inoculated with souring bacteria and yeasts, such as Lactobacillus, Brettanomyces or Pediococcus. The use of these wild yeasts produces a sour or "funky" flavor profile, which is pleasing to many people but undesirable to others.
