This can be useful in grouped world PvP in which you are able to reach your corpse and resurrect sooner, eat, Shadowmeld, and be ready to fight again faster. It also helps recover from wipes in dungeons slightly faster, reducing downtime. This ability improves in certain zones in Northrend. Whereas other races use a spectral gryphon in Icecrown and Storm Peaks, the night elf turns into a flying wisp which moves faster than the regular "ghost mounts".
