Someone answered this already but,the cockpit depends on the story line. In The 8th MS team the cockpit for Shiro Amad's Gundam looked similar to the Gundam Units 1 and 2 of Gundam Stardust Memory. But Gundam Unit 3 had a revolving type cockpit that Kou Uraki used. It looks similar to the the cockpit of NU-Gundam piloted by Amiro Ray, but Nu-Gundam used the Psycoframe technology in his. On Gundam Wing Heero and Zechs had the Zero system in Epyon and Wingzero. The Freedom and the Justice from Gundam Seed also shared similar looking cockpits. Aside from Nu-Gundam, the hand controls mostly look similar to that of a fighter jet. With the windows actually being video screens that are connected to the Gundams head mounted (and eye) cameras
