MountainTop Bleu is one of two goat's-milk blue cheeses manufactured by FireFly Farms, Inc. of Accident, Maryland. (The other is Black & Blue.) Of FireFly Farms' two blue cheeses, MountainTop Bleu is softer in texture and milder in flavor (both as regarding its characteristic blue cheese flavor, and as regarding its goats' milk flavor). Like Merry Goat Round, Mountain Top Bleu is surface-ripened, ripening inward from the rind, with the interior being softer and creamier than the portions nearer the surface.
