Because he was turned into an Arrancar, and Arrancar's release looks different then their hollow form-for example, Grimmjow went from a panther to a panther-human hybrid. (It could be that since his is a mishmash of so many hollows, it is symbolized by his lack of any real definable features...but this is pure speculation on my part.)
