The leaves of greens and lettuces are basicly cellulose filled with water. Darker leaves are more nutritious. If they are left in tact, most lettuces will last longer. When you cut a leaf, you breach the cells and bruise it. If you tear one, it splits along the cell boundary. Dressing sticks to dry leaves better than wet. The leaves of the potato plant are poisonous.
