Ca Cuong (cà cuống in the Vietnamese language; Lethocerus indicus being its scientific name) is a giant water bug in the family Belostomatidae, native to Southeast Asia. It is well-known as an edible species, with a number of different regional cuisines preparing it in different manners. In Vietnamese cuisine, the insect's essence, a pheromone from the males and also called cà cuống, is used in a variety dishes. In parts of Thailand the insect is a popular dish, whole and fried, as an extract, and used in a type of chili sauce.
