A Middle Eastern flat bread, also called pocket bread. is a flat unleavened bread made from whole-wheat or white flour. These rounds can be cut in half and stuffed with savory fillings. It is essentially a handmade bread fried in a little olive oil on both sides, after baking and must be eaten immediately otherwise, they harden on cooling. Pita are found frozen or fresh at most markets.
