To pickpocket a person, crouch (therefore going into sneak mode), and then come up behind the person you want to pickpocket. Make sure it still says [Hidden] on your screen right before you pickpocket them. Once you're close enough to them, it will give you the option to pickpocket them. Note: The higher your Sneak skill is, the better chance you'll have not to get caught.
