A French sheep's milk cheese produced in various sized wheels. It has a firm, hard texture that is perfect for grating and a slightly sweet, nutty flavor. The cheese is covered with a thick, yellowish rind. Ardi Gasna may be difficult to find outside of the areas of France where it is produced.
